Ingredients
  • 1 1/2 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1/3 teaspoon salt
  • 3 tablespoon unsalted butter, melted
  • 3 tablespoon honey
  • 1 1/2 cup milk
  • 1 large egg
  • 2/3 cup pitted dates, chopped, save 1/4 cup for garnish
  • 1/4 cup butterscotch chips, save a sprinkling for garnish
  • 2 tablespoon fresh whipped cream
  • 1 dash of cinnamon
  • vegetable oil, for frying
  • 1 strawberry, sliced
Directions
  1. In a large bowl, wisk together flour, baking powder, and salt and set aside
  2. In another bowl, wisk together butter, honey, milk and egg and set aside
  3. Add the wet ingredients to the dry ingredients and beat till just combined and smooth.
  4. Heat a large non-stick skillet over medium heat and add a small amount of vegetable oil to coat
  5. Drop in equal amounts of batter and sprinkle in dates and butterscotch chips and cook till bubbly, then flip and cook till done, golden brown
  6. Stack on plate, dust with powder sugar, dollop on whipping cream, sprinkle cinnamon, add strawberry, remainder of dates and butterscotch chips.
  7. Serve with honey or your favorite syrup
