Ingredients

Chicken Spinach

  • 3 Cups cooked tri-color pasta
  • 1 small onion, diced
  • 1 Tablespoon oil
  • 1 small red pepper, diced
  • 1 Cup cooked spinach
  • 1 Tablespoon dried basil
  • 1 Tablespoon dried oregano
  • 4 thin-cut chicken breasts, sliced

Alfredo Sauce

  • 1/2 Cup half and half
  • 1 Cup grated Parmigiano
  • 1 Cup grated mozzarella cheese
  • 2 Tablespoons butter

Directions

Chicken Spinach

Drizzle oil in a large pan and raise the heat to medium. Pour in the chopped onions and pepper and allow them to cook until soft, stirring occassionally. Add the sliced chicken and spinach next, and allow to cook thoroughly, stirring occasionally.

Drain the oil from the pan and, in a separate pot, mix the cooked pasta and the chicken mixture. Top with seasonings and stir, set aside, and cover the pot with a lid to lock in the heat.

Alfredo Sauce

In a saucepan over low heat, pour in milk and butter, and melt butter by constantly stirring. Add in the two cheeses and keep stirring until everything is melted.

Pour the Alfredo sauce over the pasta and chicken mixture and toss together, making sure to coat the chicken and pasta as much as possible. Serve warm.

Chicken Shopping Tip

Buy whole chickens and ask the butcher to quarter them for you. You will save an average of $5 per pound, or more.

Chicken Cooking Tip

Allow meat to rest for at least ten minutes before slicing into it; otherwise, the juices will leak out.
