Ingredients
  • 1 8-ounce box dry pasta, such as banza chickpea pasta
  • 1/2 tablespoon butter
  • 1 cup diced celery
  • 1/4 cup diced red onion
  • 1 garlic clove, minced
  • 3 green onions, sliced
  • 2 tablespoon buffalo sauce
  • 3 ounce light cream cheese, softened
  • 5 ounce plain greek yogurt
  • 1/4 teaspoon salt
  • 1/2 cup 2 percent milk
  • shredded cheddar cheese
  • 1/2 cup crumbled blue cheese
Directions
  1. Cook pasta according to package directions.
  2. In a medium sauté pan, heat butter over a medium heat until melted. Add in celery, red onion, garlic and 2 green onions. Sauté until softened and fragrant, about 5 minutes.
  3. Turn the heat down to low and add in buffalo sauce, cream cheese, Greek yogurt, milk, and salt. Stir until cream cheese has melted.
  4. Add in cooked pasta and cheese, toss until combined and cheese is melted.
  5. Transfer to serving dish and garnish with green onion and blue cheese.
