Classic Sweet Potato Surprise Recipe
Here is an easy and delicious sweet potato recipe, adapted from the 1948 spring issue of Good Housekeeping Magazine.

Ingredients
- 1 8 ounce can of sweet potato
- 1 cup crushed cereal flakes
- 1 tablespoon butter
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 4 marshmellows
- 1 teaspoon orange rind, grated
- 1/3 cup milk
Directions
- Heat oven to 425ºF.
- Place milk, butter, and potatoes in a saucepan. Heat till butter is melted and milk is hot.
- Mash potatoes; adding salt, pepper, and orange rind.
- Form into four balls, with a marshellow placed in the center of each. Roll each ball in beaten egg mixture, then in cereal flakes.
- Bake on pie plate for 25 minutes.
