Classic Sweet Potato Surprise Recipe

Here is an easy and delicious sweet potato recipe, adapted from the 1948 spring issue of Good Housekeeping Magazine. 


  • 1 8 ounce can of sweet potato
  • 1 Cup crushed cereal flakes
  • 1 Tablespoon butter
  • 1 egg, beaten
  • 1/2 Teaspoon salt
  • 1/8 Teaspoon pepper
  • 4 marshmellows
  • 1 Teaspoon orange rind, grated
  • 1/3 Cup milk


Heat oven to 425ºF. 

Place milk, butter, and potatoes in a saucepan. Heat till butter is melted and milk is hot. 

Mash potatoes; adding salt, pepper, and orange rind. 

Form into four balls, with a marshellow placed in the center of each. Roll each ball in beaten egg mixture, then in cereal flakes.

Bake on pie plate for 25 minutes.
