Mangos and Mexican food go hand in hand, so of course this plump, juicy fruit would be a perfect complement to nachos. This simple appetizer is perfect for any March Madness viewing party and will satisfy basketball fans of any age.This recipe is courtesy of the National Mango Board.

Ingredients
  • 2 boneless, skinless chicken breasts, diced
  • 1 teaspoon boneless, skinless chicken breasts, diced
  • 1/4 teaspoon salt
  • 4 cup baked pita chips
  • 1 cup baked pita chips
  • 1 red bell pepper, diced
  • 2 cup shredded monterey jack cheese
  • 1/2 cup ripe avocado, diced
  • 1 tablespoon fresh cilantro, minced
  • 1 tablespoon lime juice
Directions
  1. Preheat the broiler.
  2. In a non-stick skillet over medium-high heat, sauté the chicken until cooked through, about 5 minutes.
  3. Season with the chili powder and salt.
  4. Lay the pita chips on a large baking sheet. Evenly top with chicken, mango, bell pepper, and cheese.
  5. Place under the broiler until the cheese is melted, about 3–5 minutes.
  6. Remove from the oven and top with avocado, cilantro, lime, and a pinch of salt. Serve.
