  • 1 1/2 cup unsweetened almond milk
  • 1/3 cup chia seeds
  • 1/4 cup maple syrup
  • 4-6 peanut butter cookies, such as just peanut butter cookies
  • 2 ripe bananas
  • 1/3 cup roasted peanuts, chopped
Directions
  1. Soak the chia seeds. In a medium bowl, whisk together the almond milk and chia seeds. Make sure the chia seeds are fully submerged. Let sit 20 minutes for the chia seeds to hydrate.
  2. Add flavorings and chill. Add the peanut butter, maple syrup, and cocoa powder. Whisk until fully combined. Cover with plastic wrap and refrigerate until thoroughly chilled, at least 4 hours or up to 2 days.
  3. Prepare the toppings. When ready to serve, crumble the peanut butter cookies into small pieces with your hands into a small bowl. Thinly slice two bananas.
  4. Layer the parfaits. Place half of the banana slices in 4 to 6 small jars or glasses. Dollop half of the pudding evenly over the bananas. Sprinkle half of the cookie crumbles over the bananas. Sprinkle with half of the peanuts. Repeat the layering of the remaining banana slices, pudding, cookie crumbles, and peanuts. Serve immediately.
