Get the sweet, rich taste of caramel in your holiday cocktails without all of that heaviness and extra calories by using a caramel-flavored tea syrup. Aged rum adds in a spicy richness to this drink, with carrot juice and lime juice for some much-needed freshness.This recipe is courtesy of Teavana.
  • 8 ounce rock sugar
  • 8 ounce water
  • 1 ounce teavana caramel almond amaretti loose leaf tea
  • 3/4 ounce carrot juice
  • 3/4 ounce lime juice
  • 1 ounce caramel almond amaretti syrup
  • 1 1/2 ounce aged rum, preferably barbancourt or gosling brothers
  • ice
  • carrot wheels, for garnish
  • lime wheel, for garnish
  • 1/2 vanilla bean, for garnish
  1. In a small saucepan, combine rock sugar, water, and loose leaf tea.
  2. Simmer for 5 minutes.
  3. Let steep for 20 minutes.
  4. Fine strain.
  5. On large pieces of ice, shake all ingredients except garnishes.
  6. Into a Belgian glass, fine strain the cocktail.
  7. Top with ice cubes.
  8. Garnish with carrot wheels, lime wheel, and halved vanilla bean.
