How great is a Caesar salad when you get a bite of lettuce, drenched in dressing, and a crispy crouton? Now take that crouton and replace it with fries. We did, and it was amazing.

Ingredients

For the fries

  • 1 Cup thinly sliced romaine lettuce
  • 4 Tablespoons Caesar salad dressing
  • 1/4 Cup grated Parmesan cheese
  • 1 1/2 Cup frozen fries, baked or deep-fried

Dressing

  • 2 eggs
  • 2/3 Cups extra-virgin olive oil
  • 2 large cloves garlic, completely smoothed and pressed on a cutting board with a knife and coarse salt
  • 1 Teaspoon dry mustard
  • 3 Tablespoons lemon juice
  • Coarse salt and freshly ground black pepper, to taste

Directions

For the fries

Place ½ cup of the romaine lettuce in fry boat or shallow bowl. Dress the lettuce with 2 tablespoons of the Caesar dressing and half of the Parmesan cheese. Add the fries on top, the rest of the romaine lettuce, and the rest of the dressing and cheese.

Dressing

Fill a small pan with water and bring it to a boil. Add the eggs and coddle for about 45 seconds. Remove from the water. In a bowl, whisk together olive oil, garlic, and dry mustard. Crack the eggs into the olive oil and whisk. Add the lemon juice and season to taste with salt and pepper. Set aside.

It's not hard to make your own croutons. Cube some old bread, place into a 350 degree oven, and toss and turn every 10 minutes until golden brown.
