Buffalo Chicken And Waffle Bites

Ingredients
- 1 1/2 cup krusteaz belgian waffle mix
- 3/4 cup water
- 1 large egg
- 3 tablespoon vegetable oil
- 24 frozen crispy popcorn chicken bites, cooked to package directions
- buffalo wing sauce
- ranch dressing
- blue cheese crumbles
- 1 green onion, chopped
Directions
- Heat and lightly grease waffle iron.
- Stir waffle mix, water, egg and oil together with a wire whisk until smooth. Let batter stand 2 minutes.
- Pour about 1 tablespoon of batter onto the corner of each quadrant of the waffle iron, to create mini waffle bites.
- Cook waffles 2-3 minutes until golden brown (or follow waffle iron manufacturer’s cooking instructions).
- Place waffles on a plate. In a bowl, toss the chicken in buffalo wing sauce, until fully coated.
- Place one chicken bite on top of each mini waffle and top with a drizzle of ranch dressing, blue cheese crumbles and sliced green onion.
- Use a toothpick to secure, if desired.
