A reworking of the classic Dark 'n' Stormy (of couse it can't legally be called one unless it's made with Gosling's rum) — this one features an impressive cube of frozen ginger beer muddled with fresh blackberries.
- 1 ounce ginger beer
- 3 blackberries
- 1 ½ ounces dark rum, preferably Gosling's
In a shaker or glass, muddle the blackberries in the ginger beer then pour into the compartment of an ice cube tray. This recipe was made using a 2-by-2-inch ice cube — if you have a large compartment tray I recommend you use it because the effect of the larger cube will be more impressive. That said, smaller cubes work perfectly well, just consider scaling down the ingredients. Place in the freezer for at least an hour and a half.
Once the ice cube is frozen solid, remove it from the tray and place in a glass. Pour the rum over the ice cube and serve.
