Barbecue Tofu Tacos

Ingredients
  • 1 package extra firm tofu, such as house foods premium tofu extra firm
  • 1/2 cup barbecue sauce
  • 6 corn or flour tortillas
  • 1 large avocado, peeled, pitted, and diced
  • roasted corn, optional
  • 1/2 cup red cabbage, thinly sliced
  • 2 teaspoon white wine vinegar
  • 1 teaspoon lime juice
  • salt
Directions
  1. Crumble tofu into a bowl and stir in barbecue sauce.
  2. Warm barbecue tofu in a pot. Set aside.
  3. Assemble barbecue tofu on the corn or flour tortillas. Top with slaw, sliced avocado, cilantro, and roasted corn.
  4. Toss sliced red cabbage with vinegar, lime juice, and season with salt.
  5. Remove extra firm tofu from packaging and press with paper towels to remove excess moisture.
