Avocado, Egg, And Ham Sandwich With Pomegranate Mascarpone

Avocado, Egg, and Ham Sandwich
  • 2 slices whole-wheat bread, such as arnoldĀ® whole grains 100% whole wheat bread
  • 1 tablespoon pomegranate seeds
  • 1 tablespoon mascarpone cheese
  • 1 egg
  • 1/4 california avocado, sliced
  • 2 ounce cooked ham
  1. In a small bowl, stir together mascarpone cheese and pomegranate seeds.
  2. Heat a nonstick skillet with cooking spray over medium high heat. Once heated, place the egg on the skillet and cook to your desired firmness, about 2-4 minutes, flipping halfway through.
  3. Place ham on skillet to warm, about 1 minute, flipping halfway through.
  4. Prepare sandwich. Spread pomegranate mascarpone on one slice of bread; layer with ham, egg, avocado, and garnish with pepper if desired. Top with remaining slice of bread and serve warm.
