Apple Pumpkin Cake
The secret to this moist and delicious apple cake is protein-rich beans; use a can of Bush's baked beans for a sweet treat that's quick and easy to make. Top this cake with a dusting of powdered sugar, whipped cream, or cream cheese frosting for the perfect finish.

Ingredients
- 1 can (16 ounces) bushs country style baked beans
- 1 package (16.25 ounces) spice cake mix
- 3 large eggs
- ½ cup applesauce
- 1 can (15 ounces) pumpkin puree
- whipped cream or cream cheese frosting, for topping
Directions
- Remove the bacon from the beans. Pour the beans into a blender and puree. Set aside.
- Combine cake mix, ¾ cup pureed beans (the remaining puree isn't needed for this recipe), and 3 eggs in large bowl. Mix well using a spatula.
- Add the applesauce and pumpkin. Mix well until the ingredients are combined.
- Spoon the batter into greased 9- by 13-inch cake pan. Bake at 350 degrees F for 30 to35 minutes, or until wooden pick inserted near center comes out clean.
- Cool the cake in the pan.
- Top with whip cream or cream cheese frosting, if desired.
