I have used fat free Mayonnaise and dill relish sweetened with Splenda for a low cal verison.
- 2 Chicken Breast
- 1/4 Cup sweet relish
- 1/2 Cup Mayonnaise (I use Dukes)
- 1/2 Cup chopped onion
- 1 celery stalk (chopped)
- 1 Teaspoon vinegar (white or cider)
- salt, pepper , garlic salt to taste
Cut chicken into pieces place in microwaveable bowl.. Cover chicken with water, I usually season with salt and pepper at this time. Cover bowl with plastic wrap. Put in microwave nd cook on high for 20 to 25 mins. Drain, shred chicken, add other ingredients and mix well. Chill... and eat....
