Ingredients
  • 2 pound beef short ribs, cut into 2-inch-by-6-inch rounds
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 garlic cloves
  • salt and pepper
  • 1 jicama
  • 1 cayman mango
  • 1 red onion, chopped
  • 1/4 bunch cilantro, roughly chopped
  • 1 scotch bonnet pepper, seeded and finely chopped
  • juice of 1 lime
  • 1 tablespoon extra-virgin olive oil
  • salt and pepper, to taste
  • 1 pound guava paste
  • 1 cup guava purée
  • 1 1/2 cup ketchup
  • 1/2 cup smoked barbecue sauce
  • 1/4 cup soy sauce
  • 4 garlic cloves
  • 3 ounce hot sauce
Directions
  1. Season the ribs in a roasting pan add the garlic and the carrot, celery, and onion. Braise the ribs at 325 degrees until the meat starts leaving the bones.
  2. Slice and grill the jicama, mango, and red onion and put aside once cool. Julienne the cooled jicama, mango, and red onion. Mix all the ingredients in a blow and finish with lime juice and olive oil.
  3. Blend the all ingredients together and bring the sauce to one boil in a sauce pan. One boiled, reduce heat and cook for 20 minutes.
  4. Split the slider bun into 2, place the pulled beef on top of the bun, top it up with the slaw and Cayman barbecue sauce, close the bun, and enjoy.
