Perfect scrambled eggs with a smoked salmon
- baguette - 4 slices
- extra virgin olive oil - 2 tbsp
- eggs - 4
- milk - 5 tbsp
- butter - 2 tbsp
- salt - to taste
- freshly ground black pepper - to taste
- smoked salmon - 4 slices
- finely chopped green onion - 2 tbsp
Preheat oven to 400 C. Put baguette slices on a backing sheet and drizzle with an olive oil. Bake 5-7 min, or until golden brown. Then transfer on a plate and cover each bread slice with a smoked salmon.
Crack the eggs into a medium bowl and beat them until they turn a pale yellow color. Add the milk and season to taste with salt and pepper, whisk until incorporate. In a heavy sauce pan melt a butter, pour in eggs. Do not whisk, let the eggs cook for up to a minute. Then grab your whisker and start to stir constantly until egg pieces become firm but still a little bit moist.
Using a spoon set the scrambled eggs on a bread with a salmon slices, top with a green onion.
