I have been thinking about apple german pancakes and decided to experiment this morning! I have to say it was a success... If you don't have apples you can also use a sugar free apple mixture from a jar. This is a great paleo recipe and gluten free for everyone to enjoy! Ingredients
  • 2 tablespoon unsalted butter or coconut oil, melted
  • 4 large eggs
  • 3 tablespoon coconut flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon maple syrup
  • 1/4 teaspoon sea salt
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoon coconut oil
  • 2 tablespoon honey
  • 2 large tart apples - peeled, cored and sliced
  • melted butter to coat pie plate

  2. Preheat oven to 425. Prepare a oven safe sauté pan (I used a cast iron pan) by melting butter over a medium temperature (I used a pastry brush to coat the pan completely). In a large bowl, blend eggs, coconut flour, baking powder, maple syrup and salt. Gradually mix in coconut milk, stirring constantly. Add vanilla, melted butter and 1/4 teaspoon nutmeg. Let batter stand for 30 minutes or overnight. Add apples to the pan and sauté for 5 minutes. Just soften. In a small bowl, combine honey, cinnamon and 1/4 teaspoon nutmeg. Add in apple mixture. Take the hot pan (carefully) out of the oven and brush melted butter on the bottom and edges of pan. Line bottom of pan with apples and use all of the liquid from the mixture in the pan. Gently pour the batter mixture over the apples. Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees; F and bake for 10-13 minutes. Slide pancake onto serving platter and cut into wedges.
