Gilt Club's Jamie Dunn draws inspiration from the bar's home in Portland, Oregon to update the classic Thanksgiving Special cocktail. Calling for all local ingredients, like Ransom Old Tom gin and Imbue Dry Vermouth, the result is very floral and aromatic. —Maryse Chevriere
3/4 ounce Ransom Old Tom gin
3/4 ounce Imbue Dry Vermouth
3/4 ounce Clear Creek Pear brandy
1/4 egg whites
Dash Angostura bitters, for garnish
Ground thyme, for garnish
Combine ingredients in a cocktail shaker with ice and shake.
Strain and serve in a chilled martini glass. Garnish with a dash of bitters and ground thyme.
