This Is What You Can Eat At The 143rd Kentucky Derby

On Thursday, Churchill Downs announced its official menu offerings for the 143rd Kentucky Derby, and the list includes everything from poached shrimp tomato aspic to beef tenderloin.

According to the company, the menu is curated to bring new touches to Southern-inspired cuisine using ingredients from Kentucky farmers, dairies, and purveyors. Some ingredients include strawberries grown on a local aquaponics farm and Parma-style country ham from free-range hogs.

"Local sources are vital to giving our guests ... a unique experience that delivers traditional Southern flavors that are also fresh and modern," David Danielson, executive chef for Churchill Downs, said in a statement. "In every bite of every dish on our menu, we want to give guests from all over the world an authentic taste of Kentucky through homegrown ingredients, local flavors and true passion."

For appetizers, guests can enjoy an assortment of salads and cheeses, including roasted and pickled asparagus salad and charred onion-bacon pimento cheese. As for entrees, visitors can select from chilled beef tenderloin, Woodlands country ham, and New York strip loin. For dessert, guests can try a bourbon sea salt and chocolate caramel tart.
