Ivan Ramen Has A New Late Night-Only Pork Belly And Shoulder Ramen

Ivan Ramen, one of The Daily Meal's best ramen shops in America, knows what you need when you're out on the prowl and most of your favorite comfort food spots have closed for the night: super pork-y ramen. Ivan Ramen Slurp Shop, chef Ivan Orkin's casual homage to Tokyo's noodle bars, located in Gotham West Market in Midtown West, has debuted a new ramen creation specifically for late night munching. It's only available from 8 to 11 p.m.

The Late Night Pork Ramen is made with 24-hour tonkatsu (deep fried pork cutlets) bone broth, tender belly chashu (Japanese braised pork belly), crispy pork shoulder and chicharones (pork rinds), and is topped with crisp shredded cabbage, bean sprouts, garlic two ways, and pickled onion. You can get this ramen dish, described by chef Orkin as "hearty, porky, and complex," for $16.

This is chef Orkin's first foray into tonkatsu. As he puts it, he figured "why go light when I could go 'whole hog' and make a lip sticking, pork-obsessed bowl of ramen" with toppings that "illustrate a full array of textures of pork, including the melt-in-your-mouth tender belly and pork shoulder."
