Ingredients
- 2 ounce hamachi (yellowtail)
- 2 ounce lobster, diced
- 1 ounce mangoes
- 1/4 teaspoon lime juice
- 1/2 ounce fried onions
- 1/2 ounce scallions
- 1 tablespoon pickled jalapeño, chopped
- 1 ounce ahi tuna
- 5 yucca taco shells (a crispy yucca chip in the shape of a taco)
- 5 daikon sprouts
- 1/2 ounce lemon oil
- 4 ounce japanese mayo (kewpie)
- 1 ounce yuzu
- 1 ounce ponzu
- 1/8 ounce red pepper flakes
Directions
- Season the hamachi and lobster in a bowl. Marinate in lime juice.
- Add the kewpie sauce, fried onions, and scallions.
- In a separate bowl toss the tuna with lemon oil. Season to taste.
- Divide the ceviche mixture and place in taco shells. Learn to make taco shells in the video here.
- Top each taco with ahi tuna and garnish with jalapeño, daikon sprouts, and chives.
- Combine all ingredients well.
