Try this recipe for a different take on the traditional mashed potato. It's great to serve as a side dish for Thanksgiving.
Ingredients
- 1 Tablespoon olive oil
- 1 chopped onion
- 2 chopped cloves of garlic
- 1 pumpkin, peeled and cut into 1-inch cubes
- 1/4 Teaspoon cumin powder
- 1/4 Cup water
- Salt, to taste
- Roasted, shelled pumpkin seeds
Directions
Heat oil in sauté pan and fry onions until translucent. Add garlic and fry until golden brown. Add pumpkin cubes and cumin and sauté for a minute or two.
Add 1/4 cup of water. Cover and cook at low heat until tender.
Remove from heat and mash with fork or potato masher.
Top with roasted pumpkin seeds.
