Ingredients
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 chopped cloves of garlic
  • 1 pumpkin, peeled and cut into 1-inch cubes
  • 1/4 teaspoon cumin powder
  • 1/4 cup water
  • salt, to taste
  • roasted, shelled pumpkin seeds
Directions
  1. Heat oil in sauté pan and fry onions until translucent. Add garlic and fry until golden brown. Add pumpkin cubes and cumin and sauté for a minute or two. Add 1/4 cup of water. Cover and cook at low heat until tender. Remove from heat and mash with fork or potato masher.
  2. Top with roasted pumpkin seeds.
