Long Island Iced Tea Jelly Shot Recipe
This kitchen-sink cocktail goes down just as smoothly in gelatin form, and sets the perfect tone for a barbecue or other warm-weather gathering. Try serving the jelly shots threaded onto bamboo cocktail skewers with a small lemon wedge.
- 1 ½ cups Diet Coke
- ¼ cup lelmon simple syrup
- 3 envelopes Knox gelatin
- ¼ cup vodka
- ¼ cup gin
- ¼ cup rum
- ¼ cup tequila
- ¼ cup Triple Sec
- 25 bamboo skewers and small lemon wedges for serving, if desired
Combine the Diet Coke and lemon syrup in a medium saucepan and sprinkle with the gelatin. Allow the gelatin to soak for a minute or two. Heat over very low heat until the gelatin is dissolved, stirring constantly, about 5 minutes.
Remove from heat and add the liquors, stirring well to blend. Pour into a 9"x9" pan and refrigerate until fully set, several hours or overnight.
To serve, cut into small circles or squares. Thread a small lemon wedge onto each bamboo skewer, followed by two small jelly shots. Refrigerate until ready to serve.
