Indigenous Crop: Otto File, this corn variety is high in protein and helps preserve biodiversity


The Otto File, also known as the eight-row flint corn, has a significantly higher protein content than most other conventional corn. However, having a higher protein content also makes the Otto File more perishable, which is why most farmers choose not to grow this variety of corn. Despite this, demand for this heirloom variety by chefs pursuing great flavor has increased over the years and this has led to more of its seeds being saved for agriculture use.
