Indigenous Crop: The Jerusalem Artichoke
The Jerusalem artichoke is not part of the artichoke family, but is actually a member of the sunflower family, Helianthus tuberosus. It is also known by the names sunroot, sunchoke, or earth apple. The edible part of the plant in the tuber and it comes in many shapes and sizes. When cooked, it has a crisp texture like that of a water chestnut, and tastes similar to an artichoke.
