Fresh Mango & Avocado Salsa

This is an easy salsa recipe that is different from your typical salsas. The sweetness of the mango and the smokiness of the chipotle seasoning is a great combination!

You can tailor this recipe to your tastes. Instead of using canned tomatoes, use fresh. Rather than including Chipotles Chile Pepper seasoning, use a Jalapeño pepper (or any other type to your liking).

Ingredients

1 large, ripe avocado, mashed

Juice of half a large lemon

1 large, ripe mango, peeled & diced

1/4 cup red onion, finely chopped

3 tablespoons fresh cilantro leaves, torn into small pieces

1/2 teaspoon salt (more to taste)

1/2 teaspoon ground black pepper (more to taste)

1, 14.5 ounce can unseasoned diced tomatoes (use half the can)

1/4 teaspoon Chipotle Chile Pepper seasoning (more to taste) - You can substitute 1 Jalapeño chile, seeded & diced

Directions

Add the avocado to a large mixing bowl and mash with a fork.

Squeeze the lemon juice over the avocado.

Add the diced mango and onion to the bowl.

Add half the can of diced tomatoes including the juice. Add the salt, pepper and Chipotle Chile Pepper seasoning.

Add the torn cilantro leaves and mix all the ingredients together. Add more seasoning and lemon juice to taste.

Mango Shopping Tip

Buying fruits in season when they are at the peak of their freshness make for great tasting food and can save you money.

Mango Cooking Tip

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
