Green Bean Fries

This twist on the French fry combines a savory taste of summer with a pleasant crunch.

  • 2 eggs
  • 2 cups panko bread crumbs
  • 2 teaspoons sea salt
  • 2 teaspoons white pepper
  • Peanut oil, for frying
  • 2 pounds fresh green beans, washed and ends snapped off


Mix the eggs in a shallow bowl. Combine the panko crumbs with the salt and pepper in another bowl.

In a large heavy pot or deep-fryer, heat the oil to 365 degrees. Use a kitchen thermometer to verify the temperature.

In small batches, about 2 cups each, dredge the beans in the egg mixture and then roll in the bread crumb mixture.

Using kitchen tongs, add the green beans to the hot oil. Cook for about 5 minutes until crisp and slightly brown. Using a slotted spoon, remove the green beans from the oil and spread them on a sheet pan lined with paper towels. Transfer to a bowl and serve hot.
