The Flats Opens In Old Red Medicine Space In Beverly Hills
The Flats has opened in the old Red Medicine location in Beverly Hills. Executive chef Kyle Schutte's dishes include familiar flavors and exotic combinations. The menu specializes in locally driven small plates, salads, and flatbreads with a contemporary twist.
Serving lunch and dinner on weekdays and dinner and late-night dining on weekends, the restaurant offers a wide variety of shareable starters, including goat cheese and thyme polenta, scallops, meatballs, a bagel and lox cannoli, fried mozzarella, lamb carpaccio with frozen yogurt, and chilled prawns in a celery root burrata. Salads include cherry tomatoes with squid ink ricotta; fennel and citrus with cornbread and honey; grilled escarole with fig and preserved oranges; duck with kimchi buttermilk dressing; and a classic Caesar.
Flatbreads are divided into Old School and New School varieties. The Old School highlights include a margarita with mozzarella, tomato, and cinnamon basil; a Spanish chorizo with red peppers and caramelized onions; littleneck clams; fig and ricotta; and pepperoni with three cheeses. New School flatbreads include cured beets with toasted cocoa and golden beet ricotta; duck confit with red wine pudding and herbed goat cheese; braised bacon with egg and Parmigiano cheese; poutine with beef gravy; pulled pork with sweet potato purée; tomato kimchi with black garlic; apple with robiola and smoked bacon and Southern fried chicken with pink lemonade mozzarella.
In addition to artisanal flatbreads, a house sriracha-spiked spiced ham is also available. Desserts include an inventive take on tiramisu with steamed sponge cake, cocoa, espresso, and mascarpone ice cream; buttermilk doughnuts with tres leches and rose ice cream; and whey panna cotta with Coca-Cola and fizzy black berries.
The bar menu includes a variety handcrafted cocktails, including signature drinks such as the Wilshire Boulevardier with bourbon, port, Bruto Americano, and orange peel; the Saint Brewer's Punch with Bacardi, Champagne, Peychaud's Bitters, cucumber, mint, and crushed ice; and alcoholic slushies that rotate seasonally. The Flats also carries a wide selection of beer, wine, and bubbles available by the bottle and glass.
The interior, seating 60 guests, mixes industrial metals with temperate woods. The main wood and steel door opens to steel beams etched with olive branches. An array of industrial light bulbs encased in open geometric sculptures and attached to black ropes hang from the ceiling above throughout the open, airy main dining room. The center of the restaurant features a mural wall complete with olive trees under the 6th Street Bridge. Among the metal and wood material, the restaurant is flooded with natural light, and features unique artwork, splashes of neon, and a hanging chair from an elevated ceiling.
The Flats is located at 8400 Wilshire Boulevard in Beverly Hills and is open Monday and Tuesday from 11:00 a.m. to midnight, Wednesday through Friday from 11 a.m. to 2 a.m., Saturday from 5 p.m. to 2 a.m. and Sunday from 5 p.m. to midnight.
