You can serve this quick and tasty tuna recipe on a bed of lettuce and eat it with crispy whole wheat crackers. If you want it a touch creamier, try adding a small spoonful of non-fat sour cream.
1 can of tuna in water or oil
1 teaspoon chopped scallions, light green part only
1 teaspoon chopped tarragon (or parsley)
Juice from ½ lime, or to taste
Salt, to taste
Freshly ground black pepper, to taste
1 teaspoon olive oil (optional)
Drain the tuna, and, if in water, rinse. Place tuna in Tupperware or other container. Add the remaining ingredients (only adding olive oil if using tuna stored in water). Mix together and season again as necessary. Store in the refrigerator or eat immediately.
