Durrus Cheese Fillo Bites

But chef and writer Rachel Gaffney has a recipe that she believes is a winner with any crowd. The secret is using simple but high-quality ingredients and then letting them speak for themselves. Her Durrus Cheese Fillo Bites take a cheese from Gaffney's native County Cork, Ireland, and combines it with a light delectable pastry, pistachio nuts, and quince. She believes the secret is in the Durrus cheese: "It has a soft pink rind and it's a raw cow's milk cheese," she says. And it really pulls the whole dish together.
