Blogger Spotlight: Nibbles by Nic

Nicole Meyer shares delicious dessert recipes on her blog, Nibbles by Nic

Nicole Meyer prepares the delicious creations for her blog, Nibbles by Nic, at her home in Roslyn, New York.

This week, we’re proud to feature Nicole Meyer of Nibbles by Nic in the Blogger Spotlight. For those new to the column, every Friday, we highlight a member of The Daily Meal’s Culinary Content Network, a limited group of bloggers who write about food and drink.

We look to this group of talented food writers for inspiration and participation in The Daily Meal, whether for restaurant recommendations or new recipes to try out for dinner. Our editorial team covers All Things Food and Drink, and we tap the CCN to keep up to speed on what is happening around the country and the world — from fine dining to home cooking.

In addition to blogging at and creating Nibbles by Nic, Nicole Meyer is a mom, avid traveler, and self-professed “foodie.”

Her recipes, tips, and entertaining ideas strive to keep things simple, healthy, and, above all, tasty. Her blog offers plenty of inspiration for home cooks, reminding readers how to make their everyday recipes just a little bit more extraordinary.

The Daily Meal: What is the mission of your blog?
Nicole Meyer: To take the stress and heart palpitations out of cooking! It should be fun, light, and an all-around fantastic experience from the shopping to the cleaning (well maybe not the cleaning). Let's try and use as little dishes as possible!

How did you get started with your blog?
It all started with Turkey Meatloaf in the park in my neighborhood with a group discussing random recipes… guess what mine was?! (Best part of the intro to my book, Cups, Sticks & Nibbles!)

What are some foods you can’t live without?
Eggplant, New York pizza, sushi (uni in particular) almond butter, blueberries, and yogurt cheese!

What are some foods you can’t stand?
Sun-dried tomatoes and canned beets. (Yuck, sorry!)

What is your proudest blog post?
My Roasted Tomato Eggplant Ragu with Baked Mozzarella Croutons! I had never made a soup before and was super nervous!

What is your biggest blog blunder?
Initially not posting links to Facebook, just pictures. I had no idea! What was I thinking?

What is your most memorable comment from a reader?
A cashier approached me in Pathmark Supermarket, one of those times when I grabbed a basket (and really should have taken a wagon) and heard her speaking about my blog to another customer. She was raving about my nibbles and my heart was literally melting through my chest!

What’s on your cooking playlist?
Food Network TV and House Hunters. (They relax me!)

What are some food blogs you love?
Skinny Kitchen, The Noble Pig, Skinny Sweets Daily.

What are some food apps you like?
Love Pinterest, Instagram, and StumbleUpon! Getting into Periscoping too. (I need help!)

What is the best thing about blogging?
Creating an environment where people can learn and feel less pressure about cooking and entertaining.

What is the worst thing about blogging?
All the social media that needs to get done.

What recipe are you currently obsessed with?
Eggplant & Spaghetti Casserole Light

What would even your most loyal followers be surprised to learn about you?

That I only cook about three times a week!
