Zucchini Boats Are The Low-Cal Pizza Alternative

Sometime you get a desire for pizza that nothing else can satisfy.  When you are dieting, this desire can derail your weight loss. Zucchini boats are a low-calorie alternative to pizza that, when made correctly, may just satiate that craving. 

In this episode of POV Italian Cooking I make Weight Watcher Zucchini Boats. These zucchini boats are made with a medium size zucchini that has been de-seeded to make a "boat".  The boat is then filled with ground turkey that has been browned, as well as cherry tomatoes and a homemade red sauce.  

When dieting, I recommend making your own red sauce because it's nearly impossible to find red sauce in a jar that doesn't have added sugar.  I like a simple red sauce made from canned San Marzano tomatoes, which I puree in the food processor.  Use just enough olive oil to sweat some onions, then add garlic for several minutes before pouring in the tomato puree.  Let this simmer for 30 minutes, and then you may need to add a bit of tomato paste, if needed. This homemade sauce is super low in points.
