This fun and easy appetizer involves all the tastes of classic a classic caprese salad, but in miniature form. Held together by a toothpick, they're perfect for passing around during a summer cocktail party.
Pick the larger basil leaves from the bunch and set aside. Carefully push toothpick near the bottom of one end of a basil leaf. Add 1 grape tomato, and 1 mozzarella cube and secure with the other end of the basil leaf. Continue to assembly the caprese bites and set out on a platter. Drizzle with extra-virgin olive oil and balsamic vinegar. Sprinkle with salt.
