- 2 Cups bunch basil
- 2 Cups grape tomatoes
- 8 Ounces fresh mozzarella cheese, cubed
- Extra-virgin olive oil, as needed
- Balsamic vinaigrette, as needed
- Salt, to taste
Pick the larger basil leaves from the bunch and set aside. Carefully push toothpick near the bottom of one end of a basil leaf. Add 1 grape tomato, and 1 mozzarella cube and secure with the other end of the basil leaf. Continue to assembly the caprese bites and set out on a platter. Drizzle with extra-virgin olive oil and balsamic vinegar. Sprinkle with salt.
