In need of a quick afternoon snack? This recipes takes on a twist from a classic Italian recipe, bruschetta. I call my recipe: Bruschetta with a Twist. Your taste buds will find there is a slight lemon flavor, which comes from the lemony herb, sorrel. Sorrel accompaines this recipe along with basil infused olive oil from Cape May Olive Oil Company. It took less than 15 minutes to make and more than 15 minutes to savor and enjoy the extraordinary flavor.

Ingredients
  • 1 pint cherry tomatoes
  • 1 cup fresh basil, chopped
  • 1/2 cup fresh sorrel, chopped
  • 4 tablespoon basil infused olive oil
  • 1/2 baguette, crusty bread
  • 2 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
Directions
  1. Preheat broiler to high or if you choose, you can place the bread on the grill. Place the slices on a broiler plan with a drizzle of olive oil on the top. Char the bread on each side, under the broiler or on the grill, but remember to keep an eye on it.
  2. Mince the garlic cloves and place in a medium bowl. Chop cherry tomatoes in half and combine with garlic in bowl. Pile the basil leaves together, on top of one another. Thinly slice basil into green confetti and loosely combine with garlic and tomatoes. Repeat the process with the sorrel. Pile sorrel leaves together, on top of one another. Thinly slice into confetti and loosely combine with the other ingredients in the bowl.
  3. Add a drizzle of basil olive oil, about 4 tablespoons, or what you personally desire, along with a slight drizzle of balsamic vinegar. Gently toss tomatoes, garlic, basil, and sorrel to coat. Pile toasts from the broiler or grill around the bowl for serving. Place a spoon in the bowl and serve fresh!
