Gluten-Free Mexican Meatloaf

Crushed corn tortilla chips stand in for the bread crumbs in this gluten-free meatloaf. Along with cilantro and salsa, the chips add a Mexican twist to this family-favorite dish.

  • 2 Pounds ground beef
  • 1/2 Cup finely crushed corn tortilla chips
  • 1 egg, lightly beaten
  • 2 Teaspoons McCormick® Cilantro Leaves
  • 1 Teaspoon McCormick® Onion Salt
  • 1 Teaspoon McCormick® Paprika
  • 1 Cup salsa


Preheat oven to 350°F.

Mix ground beef, tortilla chips, egg and seasonings in large bowl.

Shape into a loaf on shallow baking pan.

Pour salsa over top.

Bake 55 to 60 minutes or until meatloaf is cooked through.

Let stand 5 minutes before serving.
