Have a refreshing cocktail this Easter, combining carrot juice with pineapple juice, ginger and gin.

Ingredients

  • 1 small piece of ginger root, finely grated
  • 1 Ounce sweetened pineapple juice
  • 3 Ounces fresh carrot juice
  • Juice from half of a lemon
  • 1.5 Ounces gin
  • mint sprig

Directions

Prepare cocktail shaker with ice.

Grate ginger directly into cocktail shaker.

Add remaining pineapple juice, carrot juice, lemon juice and gin. Shake cocktail shaker vigorously.

Strain over ice into cocktail glass.

Garnish with lemon slice and fresh mint sprig.
