Baleadas
Baleadas are one of Honduras' most popular foods. Baleadas are wheat flour tortillas — often quite thick — folded in half and filled with mashed fried beans. The authentic dish originated in El Progreso.

Ingredients
- 2 cup flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup water
- 3 tablespoon vegetable oil
- 1 can (16 ounces) low-fat refried black beans, warmed
- 1 ripe avocado, sliced into 16 pieces
- 1/2 cup sour cream
- 1 package (4 ounces) athenos traditional crumbled feta cheese
Directions
- Mix the flour, baking powder, and salt in medium bowl. Stir in water and oil to form dough.
- Knead dough 5 minutes on a lightly floured surface. Shape into disk. Cover with plastic wrap; let rest 20 min.
- Divide dough into 8 equal pieces. Roll each dough piece into 6-inch disk; cover with plastic wrap. Repeat with remaining dough to make 8 tortillas.
- Heat a large skillet on medium-high heat. Add tortillas in batches; cook 1 minute on each side until browned and lightly puffed.
- Spoon warm beans evenly over hot tortillas; top with remaining ingredients. Fold in half. Serve immediately.
