This is one of the simplest and most flavorful recipes I know. Mashing avocado to taste with salt, pepper, and lemon makes for a healthy and delicious breakfast when served on toast or a Ryvita cracker. I first tried this at a café while traveling (the location of which escapes me) and when I got home, I was pleasantly surprised to see just how easy it was to recreate. Every time I make it, I get re-inspired to make it more often!

Deliver Ingredients

Ingredients

  • 2 avocados, cubed
  • 1/2 Teaspoon fresh lemon juice
  • salt and pepper to taste
  • 4 4 slices whole wheat bread, toasted or 4 Ryvita crispbreads

Directions

In a small bowl, combine the avocado cubes with lemon juice and start to mash together. Once the mixture is at your desired consistency, season with salt and pepper to taste, combining the mixture together to evenly distribute the seasoning.

Once you have toasted your bread (or taken the crackers out of their packaging), fork a heaping helping of the avocado mixture on top and spread around to desired thickness. Et voila!

Avoid very soft avocados; choose those that yield slightly to finger pressure.

Avocado Cooking Tip

Avocados oxidize quickly; use lemon juice to keep the flesh from turning brown.
