Avocado with Oven Roasted Tomato and Fresh Ginger Dip
The best part about making avocado based dips is getting to be playful with you seasonings. Since avocado is so susceptible to flavors, you will taste the bite behind the ginger and the refreshing bite of the cherry tomatoes! This is perfect to pair with pita chips or soft pretzels for game day!

- 4 ripe avocados - diced
- 1 lb cherry tomatoes - oven roasted
- 2 Tablespoons fresh ginger - peeled and minced
- 2 Tablespoons fresh lemon juice
- 2 Ounces olive oil
- 1 Teaspoon sea salt
- 1 pinch black pepper
Preheat oven to 325º
Slice cherry tomatoes in half length wise. Place on sheet plan, drizzle with olive oil and season with sea salt and black pepper. Place into oven roasting for 20-25 minutes.
In bowl add diced avocado, lemon juice, fresh ginger and cooled roasted tomatoes. Toss with olive oil and season with sea salt and black pepper.
Garnish with roasted tomato and ginger.
Serve with toasted pita points, roasted cauliflower and/broccoli.
