To make this bacon grease country gravy, you can start by gathering the ingredients. For this recipe, you will need bacon grease, flour, milk, salt, pepper, and cayenne pepper.
Combine the bacon grease and flour
The key ingredient in this recipe is, you guessed it, bacon grease. If you are like Johnson, you typically have some lying around. She says "I usually cook bacon in the oven, and reserve the drippings. You can also fry bacon in the skillet you intend to use for the gravy." However, Johnson says "If you don't have or want to use bacon grease, you can substitute butter." Whatever source of fat you use, add it to a large skillet to warm up, before sprinkling in the flour. Stir this mixture well, allowing it to cook for about 3 minutes.
Create a roux, season, and serve
Then, add the milk, creating a roux. Make sure to stir it constantly to avoid creating any lumps. Allow the roux to cook, and thicken for about 5 minutes.
Lastly, stir in the seasoning. Johnson states, "The exact amount of salt you will need varies on how salty your bacon was. Start with ½ teaspoon, and add more to taste." Don't forget to add in the pepper and cayenne for a touch of heat. Johnson notes "This is best eaten immediately," so don't wait.
