It is a commonly held belief that good food takes time.
Some scowl and pout when some recipes use “waiting” words like: marinate, rest, chill overnight, and roast/bake/braise for (insert number) hours… This usually doesn’t bother me, but sometimes you just want it all to be faster.
So, I admit it: Never have I ever cooked with a pressure cooker before.
I’ve never experienced its magic first hand, but I do know some people swear by its capacity to cut cooking times in half while still maintaining drool-worthy quality.
