There are times when cooking a meal from scratch is both fun and rewarding. Then there are other times, when the thought of hand-chopping vegetables, stirring sauces, and searing chicken is completely overwhelming. One-pot meals seem like a great solution (at least there’s only one dish to clean after cooking!), until you read the recipe and realize that your dinner won’t be ready for an hour or more. Luckily, not all one-pot recipes are created equal; some delicious and easy-to-make meals cook so quickly that you can sit down to a meal in a half an hour or less.

When you’re looking for a meal that’s ready in 30 minutes or less, one-pot meals included, look for recipes that include quick-cooking ingredients. One-pot roasts are both delicious and easy to make, but cooking a large piece of meat takes time. Recipes that call for seafood, sausage, or small pieces of meat, on the other hand, can cook fully much faster.

Vegetarian recipes are also a great choice when it comes to quick-cooking meals; in most cases, vegetables and grains can easily be cooked in 30 minutes or less. If you want to make a vegetarian meal more filling, try adding more non-meat protein. There are a number of delicious one-pot meals that call for either protein-packed quinoa or eggs.

Another trick for quick-cooking meals: Look for recipes that call for pre-cooked ingredients. You can either cook these ingredients on the weekend (so that they’ll be ready and on hand for weeknight cooking) or you can use up the leftovers in your refrigerator. If you ordered Chinese food earlier in the week and have leftover rice, for example, make a quick one-pot shrimp fried rice for dinner later in the week.
