Along with Fat Tuesday and Ash Wednesday, Mardi Gras is also referred to as Shrove Tuesday. Just like the other titles for the day, Shrove Tuesday is a reference to preparing for Lent, with shrove the past tense of the word shrive, which means to confess. And, as you may have assumed, the sentiment of feasting before the fast holds true for this tradition as well.

In many cultures, Shrove Tuesday is informally known as Pancake Day. Similar to the Polish tradition of pączki, Pancake Day is a day when you get rid of all of the butter, eggs, and milk in your house before the fasting season begins, in this case by making a lot of pancakes.

Whether or not you plan on fasting over the 40 days of Lent, we think Shrove Tuesday is a pretty good excuse to eat some pancakes (and find a baby in your cake, and wear purple and green costume jewelry). To help you shrive (er, confess) your Shrove Tuesday, here are six pancake recipes for you to try.
