10 Tips for Making the Perfect Burger

Chef Jonathan Waxman shares his advice on how to make the perfect burger this grilling season


Undoubtedly one of the most frequently cooked items of the summer grilling season, burgers are certainly an all-American food. Of course, there is a wide range of burgers, from simple to complex, and ‘perfect’ arguably means a different type of burger for each person. There are thin, flat griddle ones and thick, charred burgers cooked on the grill. They can be topped with Maine lobster, dipped in French onion soup, or served straight up with just the basics (and maybe some gooey cheese on top).

Many chefs out there have mastered the art of the burger, whether it’s Linton Hopkins of Holeman & Finch down in Atlanta or Minetta Tavern in New York City, relying on their superior skills or the unique mix of the high-quality meats. But since most of us don't grind our own beef or plan to mix short rib into our patties, how can home cooks create this perfect burger at home?

We’re not talking about getting complicated, just the all-American basics to help you achieve that juicy, flavorful hunk of meat that satisfies like nothing else can. From finding the right ratio of lean to fat meat, mastering the technique of properly melting cheese (and avoiding the drip over into the grill), we’ve got tips and tricks from grill master Jonathan Waxman.

Celebrated chef and co-owner of Barbuto in New York City (and former Top Chef Masters cheftestant), Waxman shares his tips and advice on cooking the perfect burger so that any home cook can learn to master the art themselves.

I have even placed on top of my burgers watermelon salsa and it became my guests favorites.

I have to adjust the page each time a different screen comes up and the slide show justs keeps going without you. I didn't have time to read the tip before it went to another screen. I am interested in the subject but what a frustrating way to present it! There isn't enough time in a day to make this kind of effort to read this one story. Just print the story next time and forget the speed slide show please.

I am surprised none of the burg Guru's know the same secret I do. I use 50% lean ground beef mixed with 50% ground pork.......then spice them, cook them, the way you like.......you will love this mixed meat combo.

Not a major deal, but Jonathan Waxman, although a celebrated chef, is hardly famous for his burgers. Italian cuisine, yes, but he isn't generally regarded as a "grillmaster".

Those raw patties sure look like the meat was overworked which is one of the biggest mistakes when making burgers.

Why is it that the "me generation" seems to have the need to re-invent EVERYTHING, and by re-invent I mean restate what wasw already known. The burger tips are obvious and very frustrating to even find.

I totally agree. Almost a useless article because of the cutsie slide show and I still can find no information regards cooking time, etc. I give this article a minus 1.

VERY FRUSTRATING SITE! When you finally get to the tips they are in a slide show that moves too fast to read all of the commentary. I did see some interesting information, but it took several times of going back to the previous slide for me to get them. YIKES! The designer is either a speed reader or thinks that the American public will only look at the pictures.

If you are looking for a meat tip, it is tip #1.

If the slides go too fast, you can hit pause in the top right of the slide and move forward/back in the same area.

if that is your burger in that picture you will never ever know how to fix a burger let alone a perfect burger - you can't use a soda push tomato that's not red and you can't use that fancy lettuce on the bottom of the bun and you have no idea what meat to use

Here's the best tip DON'T follow any of the top ten tips make them how your family likes them...Lobster on the top REALLY REALLY? I can hear everyone in my family now If I'm serving them Lobster (for a combo platter) they want a big grilled juicy steak next to it....When they waant a burger they want corn on the cob, potato salad, deviled eggs fries, NOT LOBSTER on the top..
