Whether you were hosting a large Easter egg hunt or playing egg games of all kinds, many people are left with carton upon carton of hard-cooked eggs after Easter.

Eating cold, hard-boiled eggs for breakfast for a couple of weeks will certainly boost your protein intake and keep you feeling satiated for hours, but I find it to be down-right dull after a day or two. That's when I usually make egg salad. Egg salad-lovers (like myself) do look forward to this time of year to experiment with various ingredients that will add color or spice to the mixture. Instead of the plain old (yet classic) celery, I've added diced pickles, paprika and cayenne, lemon and dill — basil, too — but even then the eggs grow old.
