Turkey Dinner Sushi Roll

Justin Warner, chef at Brooklyn, N.Y.'s Do or Dine restaurant, came up with an inventive twist on a classic Thanksgiving dinner. Wrap turkey and cranberry sauce with nori and mashed potatoes for a creative sushi dish. Serve with a gravy dipping suace to round out the flavors and sushi-eating experience.

Ingredients
  • 1 half sheet of nori
  • 5 ounce mashed potatoes, chilled
  • 2 ounce turkey, shredded and chilled
  • 1 ounce prepared cranberry sauce
  • 1 tablespoon butter
  • 1 tablespoon soy sauce
  • 2 pinches of all-purpose flour
Directions
  1. On a plastic-wrap-covered place mat or plastic-wrap-covered sushi mat, place the nori, uneven side up. Using gloved hands, work quickly to spread the mashed potatoes over the nori, leaving 3⁄4 of an inch on the side farthest from you. Flip the nori over and arrange the turkey and cranberry sauce in a line down the middle, long ways. Gently use the mat to roll up the roll.
  2. Cut the roll into 6 or 8 pieces and refrigerate until ready to eat.
  3. In a small sauce pan, combine the butter and soy sauce. Heat until the butter is melted, approx. 45-60 seconds.
  4. Gently whisk in the 2 pinches of all-purpose flour. Behold, soy gravy. Drizzle the gravy over the roll and devour.
