A friend brought a version of this lovely, summery salad to a recent barbecue and it perfectly complemented the rich grilled meats. Its freshness and simplicity makes it a great recipe to share. Feel free to experiment, adding in some toasted almonds or hazelnuts or some diced Persian cucumber.

Ingredients

For the vinaigrette:

  • ¼ cup feta
  • 3 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • Juice from 1 orange
  • ½ tablespoon honey
  • Salt and pepper, to taste

For the salad:

  • One 6-ounce bag of loosely chopped baby spinach
  • ¼ cup chopped fresh mint
  • ½ cup sliced strawberries

Directions

For the vinaigrette:

Whisk together the ingredients and set aside. 

For the salad:

In a bowl, combine the spinach, mint, and strawberries. Whisk the vinaigrette to combine and the toss with the salad. Sprinkle the feta on top.
