Truffle Stuffed Chocolate Chip Cookies
Ingredients
  • 3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 2 cup semi-sweet chocolate chips
  • 24 chocolate truffles, wrappers removed
Directions
  1. Preheat oven to 350 degrees F.
  2. Line 2 - 3 cookie sheets with parchment paper.
  3. In a bowl, combine the flour, baking soda and salt.
  4. In a mixer bowl, add the butter, brown sugar and granulated sugar. Mix on medium-high speed until completely creamy, about 3-4 minutes. Lower the mixer speed and add the eggs, one at a time beating well after each addition then the vanilla.
  5. Slowly add the flour to the mixer a little bit a time. Do not overmix. Finally add the chocolate chips and combine with a wooden spoon.
  6. Take a tablespoon of cookie dough and flatten it with your hands. Place a chocolate truffle in the middle of the flattened cookie dough.
  7. With the tip of your fingers cover the truffle completely with the cookie dough. Roll it in with your hands in a circular motion.
  8. Place the cookies separately on the cookie sheet. Bake for 9-11 minutes. Remove from the oven and let the cool on a rack.
