Stuffed Buttercup Squash
Ingredients
  • 1 buttercup squash, cut in half
  • 2 tablespoon olive oil
  • 1 cup red apples
  • 3 teaspoon brown sugar
  • 3 teaspoon butter, softened
  • 1 teaspoon lemon juice
Directions
  1. Preheat the oven to 350 degrees F.
  2. Cut your squash in half and remove the seeds and flesh and rub the inside of the squash with oil.
  3. Combine apples with sugar, butter, and lemon juice. Pour ½ cup into each squash half.
  4. Cover with foil and bake for 50 minutes or until squash is tender.
